Okay, let's start at the beginning:
In "Last One Out of Beach City," Pearl says that she's been a rebel for 6,000 years, and says in "Back to the Barn" that the war lasted 1,000 years. From this, we can guess that the war began 6,000 years ago and ended 5,000 years ago.
In "Rose's Scabbard," we see a hologram of a conversation Pearl and Rose had some time ago. We don't get any details, but we do know that the conversation is very important to Pearl, and that it happened just before they did something that would mean they wouldn't be able to go back to Homeworld.
From this, we can assume that this conversation happened just before the Rebellion began, and was therefore 6,000 years ago as well.
The next major event is Garnet coming into existence. Luckily, in "The Answer," Garnet outright says that it happened 5,750 years ago, or about 250 years into the Rebellion. At this point, "a team of diplomatic Gems" was called to Earth to investigate the situation, which explains why Blue Diamond was there when it was Pink's colony (more on that in a bit)
It's also important to note that Lapis Lazuli is visible in the background in this episode, meaning that at this point in time she had yet to be put in a mirror.
Since Rose did not have her sword in The Answer, and since Bismuth made the sword, we can presume that Bismuth came into the Crystal Gems after Garnet, probably before anyone else considering her close relationship with them and her moniker of being "one of the original Crystal Gems." This would place her joining in between 5,750 and 5,500 years ago (Explanation on that reasoning in a moment).
The Beta Kindergarten, by Peridot's own words, was built halfway into the Rebellion, or rather 5,500 years ago. This would mean that Jasper and the other Betas emerged somewhere in between 5,500 and 5,000 years ago.
In "Same Old World," when Lapis is telling her story, we see her get poofed during a battle. Keen-eyed viewers will notice that there is the silhouette of an Injector at the bottom of the screen, which, coupled with the color palette of the scene, leads me to believe that this took place at the Beta Kindergarten. Meaning, therefore, that Lapis was poofed sometime after 5,500 years ago. However, since her attacker is (most likely) Bismuth, it would have to have been before 5,300 years ago.
In "Bismuth," Pearl says that it's been roughly 5,300 years since Bismuth's disappearance. Now, when she sees the Strawberry Battlefield, she remarks "I was just here!" Since Pearl also says that they originally thought they lost her during "the Battle for the Ziggurat" (which presumably is not the same as the Battle in the Strawberry Field), we can presume that Bismuth's confrontation with Rose happened in between the two battles, with the Strawberry Field one being the most recent.
In "Sworn to the Sword," Pearl shows a hologram of her and Rose in battle. Based on the landscape, the size of the axe in the Quartz's hands, and the multiple weapons seen sticking out, we can guess that this flashback is also of the Strawberry Battlefield, placing it at 5,300 years ago as well.
Next up is Pink Diamond's shattering. Now, this is where the information gets sketchy. Since "Back to the Moon," the fanbase has been divided on when exactly Pink was shattered: One faction believes it was the first blow of the war, the other believes it happened towards the end.
The thing is, the only real evidence for the former is that Blue seemed to be in charge of Earth during "The Answer." However, as stated above, she could have easily just been in charge of that "team of diplomatic Gems" sent to deal with the Rebellion, taking the load off of Pink so she could focus on colonizing (which is especially likely considering how Earth was her only and presumably first colony).
The latter theory holds much more water. Here's what we know:
Jasper (and presumably the other Betas) belonged to Pink, and only came into existence 500 years into the war.
According to Blue Zircon, at the time Pink was shattered Rose had already been a "recognized threat for several hundred years."
Bismuth did not mention Pink Diamond at all during her rant to Steven, implying that she didn't know about the shattering. Because if she did, I think she would have brought it up considering how shattering was kinda the crux of the issue there.
From this, we can glean that Pink's shattering happened after Bismuth's disappearance, but before the end of the war, placing it between 5,300-5,000 years ago.
The last event in the war, the evacuation and corruption, is fairly easy to place, since it is the end of the war, and is therefore roughly 5,000 years ago.
The one thing that I've saved for the end is the bubbling of the Rose Quartzes. Many think that they were bubbled because of Pink's shattering (putting it anytime after 5,300 years as explained above), and therefore call into question the pink color of the bubbles (which was shown in behind-the-scenes images to NOT be because of the room's lighting).
However, it is my belief that Pink Diamond herself bubbled them at the very start of the rebellion, as a "safety precaution" resulting from our Rose going rogue. This therefore places the Great Rose Quartz Bubbling at 6,000 years ago, which goes to explain why all the HW veterans of the Rebellion refer to Rose in the singular: Throughout the near-entirety of the war, there was only one Rose Quartz.
There's one more thing I want to cover here: The emerging of Amethyst.
In "Too Far," Peridot estimates that Amethyst's hole in 500 years older than the other holes (8XG, 8XJ, 8XL, etc).
We also know for a fact that Amethyst wasn't around at all for the Gem War.
However, since we don't know when she was injected, that gives her emergence date a range from 5,000 to 4,500 years ago, and the emergence of the other Amethysts a range from 5,500 to 5,000 years ago.
I'm inclined to think it was leaning more towards the formers, going with the presumptions that the other Amethysts saw a good amount of combat, and that they were injected around the same time.
